We are producers of high-quality pasta made from durum wheat flour, and also of specialties prepared with different combination of barley flour and durum wheat. Our pasta made of barley, which has a light-brown color, is particularly easy to digest and has a high fiber content, characteristics of the traditional Mediterranean diet. This type of pasta can be served with a variety of sauces. It is also simply delicious served with extra-virgin olive oil and cheese. For our pasta made of barley we use only ‘orzo mondo’, which preserves the whole grain by removing only the outermost layer. It has a similar nutritional value of the rice, although it contains fewer carbohydrates and has more protein and fiber.
